Rubber o ring behind water pump has been known to fail and can lead to a mayonaisse looking mix in the coolant.

first have you tried the diagnostic function on the speed. Kill switch to off , keep button on speedo pressed and turn ignition on and scroll to diagnostic menu. Thes same thing happens on benelli 1130's if they are washed using a pressure washer. The dash goes blank , no speedo or as you say doing 90mph when only doing 30 . the morini clutch is the same part as the benelli 1130 (wet clutch) , i've had them in my hand to check.
The only thing wrong with the clutch holding tool is it requires the clutch plates to be removed so that the splines on the tool fit the grooves on the clutch.
Otherwise a cheap investment.
