Just coming back to this agreed-value thing, it's not a question of whether a bike is 'valuable' or not (and £3,000 is a lot of money). A standard insurance company will probably value a 30-year old bike at less than £1,000 so if a Morini with a realistic market value of £3,000 does get written off, (and it won't take a lot of damage to be declared an economic write-off) you'll be £2,000 out of pocket. And the other thing is that when a bike or car is written off, it becomes the property of the insurance company, and you're unlikely ever to see it again. (By accepting the write-off payment you surrender ownership of the vehicle).

If you agree a value with your insurance company, at no cost, you'll get proper compensation and also salvage rights for the remains of your pride and joy. I can't see why anyone wouldn't do this. Insurance companies specialising in classics understand the situation, so you just have to give them a call to discuss.
